Overall theres nothing that much different then drawing an interior then their would be drawing a chair. Think of the view you want to draw and put down some good perspective lines to break up where the seat wells, dash, and center console fall. Work light and don't be afraid to do some overlays to build up to a more developed sketch.
Interiors are pretty fun, theres a lot of elements involved but you can build it up and rework areas till it all starts to flow together. Remember you don't need to draw EVERY piece of the car like it was really there - usually you'll see car designers leave off the roof, the backs of the seats, etc to give you a more holistic view of the whole interior.
